Instructions
1. Season salmon fillets with salt and pepper
2. Heat oil in large skillet over medium-high heat
3. Cook salmon 4-5 minutes per side, remove and set aside
4. Add garlic to pan, cook 1 minute
5. Add heavy cream, sun-dried tomatoes, and Italian seasoning
6. Simmer until slightly thickened, 3-4 minutes
7. Add spinach and cook until wilted
8. Return salmon to pan and serve immediately
