Instructions
1. Heat oil in large pot over medium heat
2. Add onion and cook until softened, about 5 minutes
3. Add garlic, ginger, and spices (cumin, coriander, turmeric, garam masala), cook 1 minute
4. Stir in tomato paste and cook 1 minute more
5. Add red lentils, coconut milk, and vegetable broth
6. Bring to boil, then reduce heat and simmer 18-20 minutes until lentils are tender
7. Stir in lime juice and season with salt and pepper
8. Garnish with fresh cilantro
9. Serve over rice or with naan bread
